Saturday Chicken Bonanza Part 3

The leaves are already falling.... that tells me it's gonna be a cold winter!


Being over 50 and everything that goes with it is like getting a Second Chance at Life....

I feel reborn and literally am the Best I've Ever Been!!


Chicken is done... now let it rest for at least 5 minutes...

You gotta admit - That is a Lot of Food and done in right at 37 minutes...

For a Normal Eater - That's 8 portions of  food.... that's about 4-1/2 minutes per portion.....

You got time for that?

If not, you're too busy....

Or your Priorities are all screwed up!

Or you have no taste for Good Healthy Food...

And in that case, I feel sorry for you....


Skin is crispy.... Moisture has been sealed in with that hard searing process in the cast iron vessels...

And that crazy Adobo - African - Moroccan Spice Mix Combo is blackened onto the skin and the meat....

Holy Mother of Seasoned Mercy!

That's about as good as it gets!!!


Don't forget to drizzle a healthy portion of High Quality Balsamic on the Veggies - this combines with the Veggie Stock at the bottom of the Container to make a Thing of Beauty Sauce!!!


Now let's break out that Rogue Mocha Porter and tall beer glass that's been chilling out in the ice tray of the freezer!


O beautiful for chocolate beer....
For dark brown waves of hops....

Geez Dude - What have you done?

Well I plated a generous helping of veggies - at least 3 cups and added Red Grapes, Strawberries, Banana Chips, Chocolate Almonds and Dried Cranberry Nut Mix!


And landed a beautifully blackened leg quarter right in the middle!!


Now for the Supreme Test - cut to the bone - remember - we didn't mess with it - we just seared it, put it in a 400 degree oven for 15 minutes, flipped it and turned it around, and cooked it for another 15 minutes, removed it from the oven and let it rest for 5 minutes....

And Drum Roll Please...

It's Perfect.... Cooked to the Bone and Juicy and flavorful because remember (see prep post from a couple of days ago), I peeled the Adobo Seasoned Skin back and sprinkled my African - Moroccan Spice Mix under the skin and then laid the skin back down over it....

So you got Seasoned Skin AND

Seasoned Meat!!!


Now there's a perfect bite of Chicken, Banana Chip, Hatch Chile, Asparagus, Almond and Strawberry!!!

Meat, Veggie, Fruit, Nut - Crispy, Soft, Salty, Sweet - Green, Yellow, Red - 

All in one bite!

Folks - this is Fine Dining from Your Own Kitchen - 

And here's the Kicker - I only paid 85 cents a piece for these leg quarters!!!

So this whole plate of food is less than $2.00


Halfway through one of my favorite meals of all time!!


One leg quarter down.... 2nd leg quarter up!!


Nothing but Bones and an Empty Platter and Glass...

Tough Diet huh???

Yeah... I'm eating all this and staying at 5% bodyfat and got plenty of energy to work out and be up and active from 5:30 am till 10:30 pm!


What am I doing here?

Draining and Saving the chicken fat and all that blackened seasoning from the roasting pans!!

You think the fat is gross?  Well - Let Me Let You in on a Little Secret....

It's not the Fat that kills you.... It's the foods that your body metabolize into SUGAR quickly that kills you...

By Spiking your Blood Sugar which causes a Spike in your Insulin in Response which overshoots the other way creating Low Blood Sugar... it's these Blood Sugar swings that screw up your metabolism and can eventually lead to diabetes by "overworking" or "wearing out" your body's ability to create insulin. 

Some of these "Bad Actor Foods" are Bread, Cereal, Rice, Potatoes, Pasta, Processed and Fried Foods.....

These roasting pan drippings are Liquid Gold - Nectar of the Gods....

And I will use it in future cooking to add flavor and FAT to the meat and veggies because....

Fat is Good and Fat Tastes Good!!!


As I've said before....

I Can't Stop and Won't Stop this Whole Paleo Thing!


It is the Fountain of Youth and the Pot of Gold at the End of the Healthy Lifestyle Rainbow.
