Cooking for the Weekend...


Knocked out the 8:30 Body Pump this morning at Family Fitness. Then took care of some errands and shopping.

Headed to the 3 day RedFest Music Festival and wanted to stay on the straight and narrow on my Paleo Diet so cooked everything I had...

Pork chops...


Poblano Peppers, jalapeño peppers, red bell pepper, sweet onion, zucchini, squash....


Boiled 7 eggs for 4 minutes...


A whole bunch of asparagus...


Added some multicolored miniature sweet peppers to the pile of veggies....


At this point I had lunch and 1 meal to go and 1 waiting for a meat...


So cooked a whole package (4) of the HEB Jalapeño seasoned thin cut chicken breast...



And added some fresh parsley and kale to the veggies....


And started stacking and packing...


Ended up with 5 Paleo MREs with great lean protein and a smorgasbord of veggies.

Whether you're cooking for a weekend away or the week to come, this is the way to go.

It took me < 45 minutes to prepare great Paleo meals for 2 - 3 days of eating.

Also packed Spring Mix, tomatoes, radishes, grapes, strawberries, blackberries, blueberries, bananas and mangos and all the eggs. Plus Creatine mix, Fresca and Red wine Olive Oil, Red Balsamic, salt, pepper and cayenne....

All the food and fun from home.

All it takes is a little planning, work and good quality ingredients and you can enjoy the benefits of a Paleo diet at Home, Work or Play!!
