Cold Riding and Putting the Little Skillet in the Big One!

23 degrees this morning.... that means an extra layer on everything....

Including my face!

Another one of my go-to pieces of clothing.... a Real Tree Camo Spandex total head cover.


Cleaning out the fridge for one of my All Out All In Big Skillet Dishes.


There's an old saying in the South.... When you want to cook a Really Big Meal that puts everything you have on the table....

It's called "Putting the Little Pot in the Big One".

Since I don't have a Big Pot.....Just Change that to Big Skillet.

The Homage begins with a dice of all the hard vegetables.

Sweet Onion, Green and Red Bell Peppers, Jalapeno Peppers, Carrot Sticks.....

Heavily seasoned with Salt and Pepper, Hot Madras Curry Powder, Cumin and TJ's 21 Season Salute.


Which makes a 1" deep skillet rainbow.


Next is a dice of 2 yellow squash and a half an eggplant.


Next layer in the skillet.


3rd Layer: 

Dice the last link of TJ's Sweet Basis Chicken and Turkey Sausage and the last 3 slices of TJ's Uncured Turkey Bacon.


Now prep the sweet components....

1/2 Fuji Apple diced
2 Baked Sweet Potatoes...

Both seasoned with Cinnamon.


Add the 4th layer.


Dice the remainder of the TJ's Turkey Meat Loaf...


Add Layer 5:

Turkey Meat Loaf and Kale.


That's a 14" iron skillet 2-1/2" deep so that's about 4-1/2 to 5" of cast iron skillet goodness!


I rolled that mix about 5 times - top to bottom - to cook everything evenly...


And the finishing touch..... cut off the heat and add a good dressing of TJ's Balsamic....


And cover....


And cook 2 eggs over medium in a teflon skillet on the next burner over...

And enough for the next 3 meals.


It's rough out there....

Sometimes the only comfort you have....

Is a good meal in your belly....

And the satisfaction in knowing....
