Sunset over the Hot Pool... Hotel Paleo How-to

Somehow we timed it just right....

Coming back from the Gold's Gym 6:00 pm Body Pump class...

Caught the sun going down over the horizon as we relaxed sore and tired muscles in the hot pool at the Lakeway Resort.



Not sure why I always have that stupid look on my face in the Selfies....

That's a Santa Fe Brewing Company Imperial Java Stout Ale with Coffee Beans sitting on the hot pool rim next to my left shoulder...

Fast becoming one of my favorite beers....

Especially after a morning GoldsFit WOD and an evening Body Pump...

Did I mention I love the Bee Cave Gold's Gym for a two-fer?


Here's a How-to from beginning to end on a Hotel Paleo meal - 

1st off... assemble the combatants....

Sharp French Cook knife (Yes - you had to bring that with you - do I need to make you a checklist?)
Small Cutting Board
Empty Container
Large spoon
Salt and Pepper
Olive Oil
Balsamic Vinegar
Red Wine
Plastic Container for Red Wine....

Okay - let's get this Hotel Paleo Party started!


4 - 6 oz of deboned chicken (Remember I bought the whole roasted chicken at Randalls last night)
2 roasted Hatch Chiles (Yes - I bought those at Randalls last night too)
1/2 of a Serrano Pepper (a whole pepper would make this single portion too hot)
Organic Kale
Heirloom Carrots
Radish
1/2 of a Zucchini
Some of my special African - Moroccan seasoning mix in the container at the top - for contents, see previous posts from like a week ago.


Chop everything up.


Combine in the empty container.... which is not empty anymore.


Sprinkle the kale with salt and pepper and add some water so it will steam when you put it in the microwave.


For about 3 minutes for a Low Power Microwave like the one in my hotel room....

Probably 2 minutes for the Super Duper one you have at home....


Meanwhile - back at the ranch or the sidebar - open the bottle of complementary Cabernet Savignon....


And pour a 4 - 6 oz portion in the plastic container.


Yeah - that's about right - we're not trying to get drunk here - just have a nice red wine with the meal.

And I know red wine doesn't go with chicken, but who's eating this meal anyway?


When the meat and veggies are finished steaming, cut up the radish for garnish and add to the mix along with some fresh grapes...


Then break out your favorite nuts and dried fruit - I selected banana chips, Cranberry nut mix and Pistachios and some chocolate almonds (not shown).


Add the dried fruit and nuts and mix....


Add some balsamic...


And you're done...

Paleo Hotel Meal with Protein, Veggies, Fruit and Nuts with a nice Cabernet....

Who says you need a kitchen and a night at home to eat a good Paleo meal?
