Variety of Protein, Veggies, Fruit and Spices.... Keeping Your Palette Surprised and Happy!

One of the challenges of sticking to a healthy and nutritious eating regimen is making sure you don't get tired of eating the same old thing over and over.

That's why you see me throwing a lot of different proteins, fruit and veggies into the same format.

Here, it's cubed chicken breast well seasoned with salt, pepper, red curry powder and garam masala paired with thin-sliced yellow squash.


And a Nutribullet full of cantaloupe, bok choy, grapes, banana, carrots topped with cinnamon and a fruit punch Creatine Mix.


Serve the hot mix over a cold base of spring mix salad, tomatoes with a topping of fresh cantaloupe.


If you can find a prettier, more nutritious, well seasoned platter of food than this....

EAT IT!


I'm really fortunate to have a nice furnished condo in Santa Fe..... especially since it has a barn to house the Red Stallion in.


Another asset of Santa Fe is an abundance of Markets and Stores with good tasting and healthy prepared foods.

This is a $9 plate from the Whole Food Markets "Street Food" eatery and consists of Pulled Pork, Roasted Vegetables, Mexican Rice, Black Beans, Guacamole and 2 salsas with a shredded cabbage topper.

That's a lot of healthy food for 9 bucks.


Santa Fe is still a long way from the security of family and jobs on the Texas Gulf Coast but for now, it's where I call home.


You want a variety of tastes, textures and colors in what you eat?

Start out with a skillet full of diced carrots, bok choy, onion and red bell and jalapeno peppers.


Throw in some diced roasted chicken breast and thigh and pair with a spring mix salad and Nutribullet full of a 1/2 mango, 1/3 red bell pepper, zucchini, grapes, 1/2 carrot, a little salt and fruit punch Creatine mix.

Garnish with the other 1/2 of the mango diced.


You will thank yourself you eat like this....


Every time you look in the mirror.
