One of the guys from Zia CrossFit is having a Wild Game Dinner tonight.
I didn't have any Wild Game but I threw together what I had.
Starting with the veggies:
1/2 sweet onion
1/2 red bell pepper
poblano pepper
few stalks of asparagus
yellow squash
some organic kale
baked sweet potato
Sauted that in layers with the hard veggies first....
Then added a layer of diced squash, half the kale and a link of chicken sausage.
Seasoned well with salt and pepper, hot madras curry powder, cumin and TJ 21 Season Salute.
Boned out a half a chicken breast from the Colossal Chicken from Smith's...
Diced that and the sweet potato up and beat up 4 eggs and added tabasco, balsamic vinegar and salt and pepper....
Added that to the mix along with a half a Fuji apple finely diced (not shown)
And finished it with a handful of mixed nuts finely diced....
One and Done.....
Gotta put it on the bike and get there!
