Holy Valley of Vegetables Batman!!
Hey - this is Paleo remember....and we eat lots of veggies.... in this Cast Iron Dutch Oven is:
2 Sweet Onions
5 Hatch Chiles
1 Jalapeno
1 Serrano Pepper
Tablespoon of dried chopped garlic
1/2 a bunch of asparagus
A Cup of carrot matchsticks
3 rehydrated red Ancho Chiles and half a cup of the juice from them
2 squash
2 zucchini
15 minutes into the cooking process, flip the leq quarters and swap ends with the cooking sheet to ensure uniform cooking. 30 minutes total cooking time at 400 degrees but remember some of the cooking was done in the pan searing process - if you don't pan sear, then it's 40 minutes at 400 degrees!
While that's going on.... let's make a Nutribullet full of veggie, fruit and liquid concoction goodness.
Stuff the quart container with kale, squash, carrots, asparagus....
While you got the kale going.... chop up the rest and throw on the top of the cooked veggies and roll into the veggies and cover....
Just the heat from the retained heat in the Cast Iron Dutch Oven and the cooked veggies in it will cook the kale in a couple of minutes...
Back to the Nutribullet - add white grapes and a half a Bartlett pear for sweetness...
and fill with Creatine - Fresca mix...
There she blows BEFORE execution!!
Let the Battle Begin....
Veggies and Fruit are getting pulverized!!
Green Goddess!!! This stuff will make you feel like lifting Tall Buildings in a Single Bound and it tastes Great!!

And that Chicken is looking Crazy Good!!
Make a bed of the veggies.... lay the chick on top and dress with some diced Bartlett Pear and Fuji Apple and sprinkle with an Almond - Raisin - Cranberry - Blueberry mix, Pistachios and Blueberry Almonds...
I added Banana Chips to my plate...
Then made another batch of Creatine Mix - Fresca and added Sangria Wine and Abita Purple Haze Raspberry Beer to it!
You cannot believer how Great Tasting and Refreshing this was!!
Now that's a Happy Face and a nice way to enjoy a Labor Day Lunch with my 2 Great Loves - Family and Food!
And you can see the Chicken was cooked perfectly.... juicy and delicious.
Note how the veggies and the Ancho Chile juice as well as the added Balsamic has made this beautiful sauce at the bottom of the platter.....
You can't buy food like this in a restaurant!!!
Me and the Kid motored through 3 leg quarters total and at least 3 - 4 cups of veggies....
But hey - it's Paleo - high volume of food - low volume of calories!!!
This is a Meal to Remember!
