What’s on the Menu for today Wills?

How about Pork Chop and Pineapple!!

Let's start out with Smith's All Natural bone-in Pork loin and season it up with Meat Tenderizer, Salt and Pepper and that special golden brown mix of Curry Powder, Garam Masala and All Spice.  Let the dry rub marinate for a minimum of 24 hours.

I spread the love out on the pork chops and then fork them by hand. 

Hmmm.... that sounds interesting.

Nothing like forking some beautiful pink meat by hand.


Then for these 3/4" thick chops about 3-1/2 mins on each side in a hot cast iron skillet.


While the chop is resting, in goes yesterday's rice and veggie mix with a fresh batch of cinnamon spiced pineapple chunks for a little grilling.


And there you have it.


A beautiful blackened pork chop with a topping of caramelized pineapple and a side of rice and veggies with fresh tomato for a little color and acid.

Power to the Pork and Pineapple!
