Chile Rellenos.... Deconstructed...


Slice the sides off a Poblano Pepper and cut slits in the slices so they'll lay flat. 

Grill them on both sides in a hot cast iron skillet along with some elongated patties of JD Hot Pork Sausage and then top with fresh tomato slices. 


When you're finished with the low cal version of the Mexican food classic, try my new favorite dessert...


Fresh Banana and Strawberries with cut up fresh Basil and sprinkled with glazed walnuts and toasted squash seeds with a drizzle of honey. 

This kind of food will make you wonder why you haven't been eating like this your whole life. 

And it's super simple and quick to make. 

I didn't spend more than 10 minutes total on both the above dishes.
