Saturday Post-WOD Lunch

Skillet full of sweet onion, green bell pepper and carrot sticks.

Saute the hard veggies for 5 minutes and then add kale.

Roll that around for 3 minutes and then add diced baked sweet potato.

Veggies are cooked.... dress with a little balsamic and EVOO.

Small slice of focaccia bread split for 2 open faced sandwiches and a big patty of ground turkey breast mix.

Flip and....

Serve with tomato slices and Thai Chili paste.

Not a bad post workout meal.

Well... That was Fun!

BJ and Will did show up and it turned out to be a great session.

After a marathon warm-up....

We did a 9 min AMRAP followed by a max ground to overhead.

I was 2 Power Snatches short of 3 full rounds and maxed out at 165 on the G2OH.

Next group moves through the AMRAP.

And I made it back to the casita.... quite a bit easier than the ride there.... roads were cleared thanks to the snow plows.

One passed me while I was coming back down Agua Fria.... I had to pull over as small boulder sized snowballs careened off the plow into my path.

I fell in behind the line of cars following the snow plow.....

From 4"of snow on the road to a drainage ditch.

Who says you can't ride in the snow?

Ok.... that was Fun....

And Stupid!

Well... It was kinda dicey but I made it!

The rest of the chicken, a boiled egg and a baked sweet potato.

Not sure they're gonna open today.

Are you kidding me?

Houston - We have a Problem.... SNOW!!!!

It snowed all day yesterday so last night I just randomly decided to go for a walk....

Not so much traffic in this kind of weather.

I walked in the direction of Cerillos and found myself inside Tiny's listening to the John Kurzweg band....

And I have to say... they were fantastic.... playing the old and classic Rock I loved.....

And with a woman violin and bass player and John's vocals, it was incredible!

Footprints in the snow on St Francis!

Back at the Casita....

Spooky....

Spookier...

Spookiest!

And the Snow.... she be piling up.

And this morning!

Ought to make the 3-1/2 mile ride to Zia CrossFit this morning kinda interesting....

3 Reasons I don't eat out much!

Walked down to Albertson's on Guadalupe last night with my backpack and picked up a few more groceries.

Was strolling around Albertson's and saw this 1.25 lb package of Wild Caught Pacific Salmon for $5.95.

That's pretty cheap.

Season with my African - Moroccan spice mix - Salt and Pepper, Hot Madras Curry Powder, Cumin, TJ's 21 Season Salute.

Prep a bed of Spring Mix, Carrot sticks, tomato and dried cranberry / nut mix dressed with Balsamic and EVOO and of course..... seasoning.

This took a couple of minutes....

While the salmon is cooking...

Into the trusty smoking hot cast iron skillet goes a seasoned salmon fillet.

1-1/2 mins on each side.  That's 3 minutes of cooking.

Pretty Plate... that took about $3 and 5 minutes to prepare...

And it tastes fantastic.....

Better than anything I've had in a restaurant.

So much so... that I did Round 2.

With some fingers of grilled focaccia bread with EVOO coating.

So let's see....

Cheaper......

Faster.....

Better Tasting....

More food....

And I like Cooking....

Wait...

That's 5 reasons.
