Party Leftover Paleo
Let's start with a pile of fresh veggies and fruit...
And a hot cast iron Dutch Oven.
Get a half a dozen eggs on to boil.
Diced asparagus, red bell pepper and Poblano, JalapeƱo and Serrano peppers...
4 minute boil on the eggs for soft boiled.... Dump 'em out of the boiling water at the 4 min mark - don't leave them in the hot water - they will overcook.
Debone the 2 smoked chicken leg quarters from the party.
I want some additional protein so put a preseasoned, tenderized pork chop in a hot cast iron skillet.
Dump the diced chicken in with the veggies and let it heat up...
While the veggies and chicken finish steaming, dice a banana, mango and strawberries in 2 bowls -one for breakfast, one for the beach.
Add a boiled egg to the breakfast bowl.
Start making meal sized containers of veggies and meat for future meals and a...
Beach Paleo...
Pork Chop and Veggies with a Creatine / Fresca / Sangria mix...
And a Crazy Combo and Wine for Supper...
Banana, Avocado and Boiled Egg with Mint...
Salt and Pepper to taste....
And enjoy with HEB Cul-de-sac Cabernet.
Yummy!!!
