How to make Healthy Food for 2 People for 5 days for $20 - Part 3


So at this point, 2 batches of vegetables and the 2 roasts have been pan seared. 


Got a bad taste in your mouth from something???
Maybe you should get rid of it.

With the Dutch oven and the skillet going, do a quick sauté of the rest of the veggies. 

Again, to speed the process, split them between the pot and the skillet. 


Then put 1 roast and half the veggies in the cast iron Dutch oven....


And the other half in the other Dutch oven. 


Then fill each pot up with water to within a half an inch of the top.  You can add chicken or beef broth but this will make its own just the way it is. 

This is braising. The meat and veggies will cook in boiling water in an oven at 250 - 300 deg F. 


This is the best way to cook cheap cuts of meat like roast that contain connective tissue that would otherwise render the meat tough.  Slow cooking in the boiling water, vegetables and seasonings break down the muscle and sinew in the meat and this bastes and moistens the meat from the inside.
