Chicken Skillet Dinner. Started with chicken breast I had deboned (less expensive that way) cut up in cubes, seasoned with salt & pepper. Drizzled olive oil. Sauteed in hot iron skillet with a dab of veg. oil. Took out and added to skillet onion, bell pepper, celery, brocolli and garlic until almost done, added back chicken to dish. (forgot to mention = took bones left added water, salt & pepper and made quick stock. I steamed some brown rice. Added rice to dish with some of the homemade stock. One satisfying meal. This is comfort food. Enjoy.
